Recipe: Keto Pumpkin Pie and Whipped Cream

Who says the Keto Life can’t be BASIC?

While I have mastered being gluten-free due to having Celiac disease, I’ve had to test and tweak a variety of Keto recipes so that Thanksgiving dinner is Keto-friendly. We have been having mock-Thanksgiving meals every few weeks for the last couple of months. Here is the latest and greatest pumpkin pie recipe I’m using this year. It is delicious and I’m so excited to make it again tomorrow. You’ll see that both recipes call for Swerve, a natural, zero-calorie sweetener that is easier on the tummy than Stevia. It’s available at most grocery stores and Amazon. (P.S. I love pumpkin pie for a breakfast treat with coffee so I can’t wait until Friday morning!). Good luck with your delish Keto dessert!

Keto Pumpkin Pie

  • 1 can (15 oz) of pumpkin
  • 1 cup heavy whipping cream
  • 2/3 cup of Swerve sweetener
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 2 tsp. pumpkin pie spice

Preheat oven to 350 degrees. Grease a 9-inch pie plate generously with butter.

Add all ingredients to a large bowl and mix until blended and smooth. (I use my Kitchen-Aid mixer. You can also use an electric hand mixer.) Pour mixture into pie plate. Bake for 1 hour. The center of the pie should be slightly higher than the edges. Remove from the oven and let cool completely. We put the pie in the refrigerator overnight and serve with freshly whipped cream. Makes 8 servings.

Keto Whipped Cream

  • 1 cup heavy whipping cream
  • 3 tbsp. Swerve confectioner’s sweetener
  • 1 tsp. vanilla extract

Add all ingredients to a large mixing bowl. I use my kitchen aid with the whisk attachment to whip the mixture. You can also use an electric hand mixer. Mix on low to combine the ingredients, then mix on high for 2 to 3 minutes until whipped consistency. Take care to not over-whip. Makes 14 servings.
