I am obsessed with peanut butter.
It is one of those delicacies that it is a big treat for us competitors on a show weekend. Peanut butter, jelly, and rice cakes, oh my! Being able to have peanut butter on the Keto Diet is great, and even better with these fantastic Keto Peanut Butter Cookies. They are super easy to make, gluten free, and Keto. Here’s the recipe and the macros are below! Tip: Double this and make two batches from the get-go…you won’t be sorry!
- 1 cup peanut butter
- 1 egg
- 1/2 cup Swerve sweetener
- 1 tsp. vanilla extract
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Combine the peanut butter, egg, Swerve, and vanilla extract in a bowl. Mix with a spoon until the dough is formed. Roll the dough into 1-inch balls. Place on cookie sheet in 4 rows of 3 cookies. Press the cookie with a fork in the classic X shape for peanut butter cookies. Bake in the oven for 12 to 15 minutes or until the edges are brown. Remove cookie sheet from oven and allow the cookies to cool for 10 minutes before removing to a wire rack for cooling. Single recipe makes 12 servings.
